Lucky Black-Eyed Peas

16 oz black-eyed peas, soaked 1-2 hours
4 cups spring water
2 Tbsp coconut oil
1 onion, finely diced 
2 garlic cloves, minced
1 medium red pepper, finely diced 
1 large tomato, finely diced 
1 cup organic coconut milk
1 bunch fresh thyme
1 tsp Himalayan salt

Rinse the peas.

Put peas in a pot with water over medium heat and cook until tender.

Remove peas from heat, drain and let cool in a bowl.

Put coconut oil in a large pan over medium heat.

Add onions and garlic and sauté until translucent.

Add red pepper, tomatoes, salt and thyme and mix well.

Add coconut milk to the pan.

Add black-eyed peas to the pan, mix all ingredients well and let simmer for 10 to 15 minutes.
Let cool for 5 to 10 minutes.

Plate with rice or favorite greens and serve.
